Welcome to GOOD SAINT! I'm Amber, and I made the transition to a plant-based diet nearly 8 years ago. I was born and raised in a rural town in Maine & grew up eating an omnivorous diet, generally eating plants and animals we grew + harvested ourselves. This meant a lot of heavy, homemade, meat-and-potatoes style meals. I turned to disordered eating in high school, struggling to maintain a weight I felt was 'acceptable'. After moving to California at 18, I realized that the foods I was eating - no longer straight from the farm and often very unbalanced - had totally screwed with my microbiome (all that good belly bacteria!) and were making me sick, unhappy, and unhealthy.
For years I intermittently eliminated different types of food to find what worked best for me, and found that my body thrived when I really began focusing on eating fresh fruits, vegetables, and grains. After some allergy testing, an endoscopy, colonoscopy, ingestible camera, and the regular and very real allergic reaction to certain foods, I've discovered extreme aversions to soy, dairy, sweet potatoes, cashews and green beans, among what feels like a very long list of other milder allergens. I don't call myself a vegan anymore, and aim for a little more balance in my life, but I do strive to eat plants as often and organically as possible. Of course avoiding allergens is tricky, but that's the journey!
Transitioning to a plant-powered diet with the inclusion of lots of probiotic-rich foods has changed my life for the better: I sleep better and have eliminated most of my unknown bloating, fatigue and eczema. Soon after I cut the crap out of my diet, my handsome husband followed suit, and now we're working to be the healthiest little family we can be. I love getting outside and working out, and I'm certified as both a 200 hour Power Yoga Teacher + Yoga Sculpt Teacher. My husband Alex and I live in Fullerton, California with our pitbull pup Maddie.
