Vegan Muddy Buddies
The holidays are officially here! In our house, we associate celebrating with all kinds of yummy treats. Plus, its almost time for our work Christmas party! This means time to start preparing gifts for our coworkers. This year, we decided to make vegan treats and fill reusable glass jars with them. I love the idea of convincing our non-vegan friends that our desserts can be just as delicious as theirs and cruelty-free, too! Plus, by using these glass jars, we're cutting down on paper waste and giving a gift that we can feel good about giving. Being that we are SERIOUS chocolate fiends, we were hoping to put a vegan spin on the original Chex Muddy Buddies recipe. We found out that rice Chex are vegan and knew we had to make this immediately! Here's what you'll need for ours:
Ingredients: 9 cups Rice Chex 1 cup vegan chocolate chips 1/2 cup almond butter 1/4 cup vegan butter (earth balance works!) 1 teaspoon vanilla 2 cups powdered sugar* *The original recipe called for 1 1/2 cups, but we found we needed another half cup to evenly coat the cereal. Also, we made our own powdered sugar. To do this we added about two teaspoons of corn starch to the turbinado sugar and ground it in our food processor until it was powdery enough for our liking. Directions: In a large bowl, measure and set aside Chex cereal. In a separate microwaveable dish, add chocolate chips, peanut butter, and butter together. Microwave on high for about a minute. Stir. If mixture isn't very creamy, microwave for several seconds longer. Stir again. Pour melted chocolate mixture over cereal and stir until evenly coated. Pour chocolate covered cereal mixture and powdered sugar in a gallon sized plastic bag (or any other large mixing container), and shake until powdered sugar evenly covers chocolate and cereal. Spread cereal on a waxed-paper covered sheet pan to cool. Enjoy! (Any leftovers can be stored in the refrigerator.) *** ***According to emails with a General Mills rep, I found that while CORN Chex are NOT vegan (the D3 in the CORN Chex is derived from lanolin), RICE Chex ARE. Please be aware of this and be sure to buy the RICE Chex only to keep it vegan.***

Hey technically the d3 in it is derived from animals so it is NOT vegan.... :(

According to emails with a General Mills rep, I found that while CORN Chex are NOT vegan (the D3 in the CORN Chex is derived from lanolin), RICE Chex ARE. Please be aware of this and be sure to buy the RICE Chex only to keep it vegan!

I just got off the phone with the company and they said it is derived from lanolin sheeps wool which means it is not vegan Leave a Reply. |
