Latest Obsession: Canopy Verde's Bergen Vegan Tote!

When I got my new Bergen Vegan Tote from Canopy Verde in the mail, I was already in love with it. I'm not super girly, I rarely wear anything but jeans and don't even own makeup; I don't wear a lot of jewelry and I never, ever carry a purse. I'm just a minimalist gal with low-key style who likes to keep it simple. So when I first talked to Linda from Canopy Verde about the bag, it was important to me that it be something I could use everyday, all day, and would go with everything. I wanted something effortless, and I found it in the Bergen Tote. It's made of eco-friendly brown faux leather and organic stone-colored cotton, and because of its chic, simple design it really does go with everything - this is no one-season bag!

I wear a lot of neutral colors, so this bag really did fit quite easily into my current style profile. And because Canopy Verde keeps it simple, the Bergen really is a classic design that would look good on anyone's shoulder. Because I'm always running around and dragging a bunch of crap with me, it was important that I find a bag that I could actually carry my stuff in. The Bergen Tote is lined with beautiful tangerine fabric and adorned with wooden accents, with plenty of room inside for me to carry some notebooks, my camera, phone, and wallet with room to spare. It has a few good sized inner pockets, including a zippered one, as well as an outer pocket along the back side perfect for tucking your phone or cash.

The Bergen Tote is thoughtfully made with organic certified cotton, PVC-free vegan leather, and eco-friendly dyes, so it's also a bag you can feel really proud to carry around. Linda Wong, the creator, is inspired by mid-century Danish design, her Brooklyn neighborhood, and a commitment to being as Earth-friendly as possible. She works with a fellow woman entrepreneur in Hong Kong to create the bags and ships them internationally, always trying to cut down on waste and reusing materials whenever possible. She's a kickass #GIRLBOSS and someone we're happy to support.

So maybe a shoulder tote isn't your style? I get it. And so does Linda, because she has designed everything from clutches and wristlets to satchels and shoulder bags - they have something for everyone! Rebecca Leffler’s new plant-based, gluten-free cookbook, ‘Trés Green, Trés Clean, Trés Chic’ is full of French-inspired recipes full of flavor, color, and creativity- and today, we’re not only sharing a recipe from the book, but we’re giving away a copy to ONE lucky winner. When I first received the book I was instantly impressed with the bright, appealing colors and fresh ingredients in every recipe. Rebecca, a writer, journalist, and former French film critic now works in New York as a lifestyle + wellness consultant. She uses her experience in French living and eating to introduce clever, plant-based interpretations of classic dishes. Her recipes are all about being fresh, light, and healthy. You’ll find plenty of dishes you sort of recognize - White Asparagus Velouté, Beauty Bourguignon, Amaranth Caviar - and some you might not, like the Beet Ravioli with Faux-mage, or her Le “Chic” Cake. But they are ALL worth trying! Its fun to get a cookbook with dishes I would never think to explore myself, and Rebecca’s cookbook has given me a new appreciation for simple French cooking!
What I love most about her cookbook are the extras, like when she shares favorite yoga sequences, natural beauty treatments, and positive vibe playlists. Rebecca's belief that mind and are intertwined is one I definitely agree with, and I love her incorporation of whole body health into her book. Her recipes are simple enough for everyone to attempt but tasty and sophisticated enough that everyone’ll guess it must be from a fancy new French place down the block. We especially enjoyed making the Cauliflower Steak Frites and Tahini Hollandaise. So easy, so much flavor!

Today, we’re sharing Rebecca’s recipe for ‘Notella’ a raw, vegan spin on the classic hazelnut chocolate goodness. Here’s what she has to say about it:

Like any American child, I grew up on peanut butter and jelly and - quelle horreur - fluffernutter sandwiches, AKA peanut butter and marshmallow fluff between two pieces of (white! processed!) bread. In France, Nutella is the traditional 'kid' food. The real Nutella has added sugar, milk powder, and other emulsifiers, but who needs them? Chocolate and hazelnuts are a winning combination on their own, from both a nutritional and flavor perspective. Spread this creamy cacao on tartness, rice cakes, or crackers; use it as a dip for fruits like strawberries, bananas, or apples; add it to Pancrepes; or tap into your inner child and eat it out of the jar with a spoon while no one is looking!

INGREDIENTS
1/2 cup (100 grams) hazelnut butter, homemade or store-bought (no sugar added)
2 tablespoons cacao powder
1/2 teaspoon vanilla powder or extract
1 teaspoon coconut sugar (optional)

DIRECTIONS
Mix all ingredients in a bowl with a spoon until homogenous. Store in a closed glass jar for several days...or weeks, if you don't finish it before!

Chances are, you've been to Dreena's Plant-Powered Kitchen blog. If you haven't- drop EVERYTHING and GO NOW! Everything she does is amazing. Her plant-powerful, family-friendly, whole food recipes are always thoughtfully presented and beautifully photographed, and her 20 years of knowledge as a vegan shines through in her creative recipes. Dreena is one of the pioneering vegan cookbook authors, and Plant-Powered Families is her 5th cookbook. She definitely knows how to throw together a great recipe, and this cookbook offers up 100 of her kid-tested & family approved favorites. The book is organized into both a cookbook and some helpful hints on getting picky eaters from toddlers to teens to eat and enjoy more plant-based meals. And with recipes like Double Chocolate Orange Banana Muffins, Pumpkincredible Hummus, Umami Sun-dried Tomato & Almond Burgers, Milk Chocolate Fudge Sauce, and Dreamy Baked Bananas...how could they not?! This is a great cookbook for people new to the plant-based lifestyle, families looking to get creative with new recipes, and parents looking to pump up the veggies in lunch boxes and around the dinner table. There's something for everyone, and since Dreena is an expert, you can guarantee everything you make will be good.
We chose to share Dreena's recipe for White Bean Guacamole because we love avocados AND we love recipes that pack a little extra protein punch - and this one certainly does! Plus, the flavor is mellow enough for kiddos but satisfying enough for adults. Its delicious! But first, a note from Dreena about this recipe:

It’s no secret that our girls love guacamole. We go through many avocados a week. One night I decided to stretch the avocados and bump up the guac nutritional profile with the addition of white beans. Somewhat a cross between a guacamole and a hummus, this thick, creamy dip is a hit in our house.

Dreena Burton's White Bean Guacamole
Ingredients:

2 lightly packed cups roughly chopped/sliced ripe avocado
1 cup white beans
1/2 teaspoon sea salt
2–21/2 tablespoons lemon juice
Water, to thin as desired

Directions:
Place the avocado, white beans, sea salt, lemon juice, and water in a food processor or blender and blend until smooth. Season to taste with additional salt and/or lemon juice.

Notes:

Kick it up for the adults by stirring in one of these add-ins: a few tablespoons of a mild salsa, minced fresh parsley or cilantro, or grated garlic.
Try pureeing in a handful or two of baby spinach (this will smooth out best in a Blendtec). It will simply intensify the green color and you’ll have added a little extra green power!
FV Note: We prefer a chunkier guac, so we mashed our avo + beans with a fork rather than a food processor. We also added a sprinkle of red pepper flakes and some fresh cilantro on top!

'Healthy Happy Vegan Kitchen' Recipe, Review + Cookbook Giveaway!

When I first went vegan a little over 5 years ago, Kathy's blog Healthy Happy Life was one of the first recipe blogs I discovered. Her vibrant photos of tasty-sounding dishes immediately drew me in, and her spunky, carefree writing in her blog posts made me feel like we could definitely be friends. Kathy just exudes happiness and totally embodies the bright, sunny, glowing So Cal personality we all wish we had. Her instagram is full of drool-worthy meal pics, cute kitty photos, and plenty of travel. She seems so effortlessly cool- so when I met her at a blogging party in February, I was in total blog-geek-awe! I was so nervous to talk to her, this vegan goddess of good food. As it turns out, Kathy is just as nice and bubbly and sweet in person as she is online. And I love that! She is warm and friendly and happy to share the secrets of her blogging successes- and failures. She is the blog- mentor we all need and the sweet friend we all want. What a gal!
When her first cookbook, 365 Vegan Smoothies came out 2 years ago, I was just starting to blog more often and really pay attention to what other bloggers in the vegan community were doing, and I was wowed. A WHOLE cookbook of vegan-friendly smoothies?! I don't have enough creative juices in my whole body to come up with that many smoothie recipes! This new cookbook is packed with just as much beautiful photography, but Kathy's creativity really shines with the wealth of different types of recipes. I love the content preview (shown below)- it's set up similar to a blog in that it's very photo based, which I think is a great, fresh way to approach a cookbook. We're so visual, and its clear that a content page like this is very attention grabbing...great idea! I also love the simplicity of the recipes in this cookbook. Most of the recipes are a vegan take of a healthy, classic, or favorite recipe, the perfect cookbook for showing that veganism is accessible and do-able for anyone. Some of the recipes we can't wait to make? Sweet Potato Pistachio Cakes, Pesto Chickpea Bowls, Creamy Cashew Pot Pie, and Peanut Butter Brownies. YUM!

When Kathy offered to she us a copy to review- we were THRILLED! We've made a few recipes from the book so far, but our favorite has been these sweet, simple, gluten-free Almond Butter Jam Thumbprint Cookies. They whip up in minutes and are light just the right amount of sweet. The oat flour melts in your mouth and finishes with a sweet touch of your favorite jam. We used some strawberry vanilla bean jam from our CSA box and it was perfect- but we're betting just about ANY jam would pair well with these light, sweet cookies! We ended up using an extra teaspoon of coconut oil to make our dough come together a bit better, but other than that, the recipe was flawless. I always forget how much I love thumbprint cookies- they take me right back to childhood. They're just so good! And these are gluten-free, which makes them shareable with everyone, too. Gluten-Free Almond Butter Jam Thumbprint Cookies

INGREDIENTS
¾ cup homemade oat ﬂour (or store-bought!)
½ cup vegan sugar or coconut sugar
2½ tablespoons almond butter, softened
2 teaspoons virgin coconut oil, softened
¼ teaspoon ground cinnamon
Pinch of sea salt
Pinch of baking soda
2 tablespoons fruity jam, any ﬂavor (we used strawberry vanilla bean jam from our CSA box)

DIRECTIONS
Preheat the oven to 400°F. Line a baking sheet with parchment paper. In a bowl, combine all the ingredients, except the jam, until a soft dough forms. Carefully roll the dough into balls and place on the prepared baking sheet. Press a small thumbprint into each cookie. Place the cookies in the freezer for 10 minutes to solidify the shape for baking. Bake the chilled cookies until they are rounded and lightly puffed and darkened on the edges, 8 to 10 minutes. Pull the cookies from oven and dab a small bit of the jam in the center thumbprint of each cookie. Remove the cookies from the pan and transfer to a plate. Place the cookies in the fridge to chill. Serve the cookies once they have cooled and ﬁrmed up a bit, otherwise at room temperature they will be slightly soft in texture. These cookies are best served the same day they are baked. Store any leftovers, covered, in the fridge, for 1 to 2 days. For longer storage, place the cookies in sealed containers or baggies and store in the freezer. Rewarm the frozen cookies in the microwave for 30 seconds, or allow to come to room temperature on a plate on the counter. Makes 8-12 cookies.

Top 5 NEW Faves from Expo West 2015

It was our first year tackling the monster that is Expo West this year- and I had a goddamn blast! There were tons of products to see, people to meet, and of course samples to eat. I spent 2 full days there and still feel like I missed seeing half the vendors. It was madness! We got bags and bags of samples, found a bunch of new products to love, and met the faces behind some of the products we already love. We dug through our goodies, used most of them, and then decided to share a few of the favorite NEW products we found at the show. Not all of them are on the market yet, so you're even getting a little sneak preview of some products that'll be hitting shelves this summer. We can't wait for Expo West '16!

1. Sriracha Sunflower Seeds from Hail Merry
Jackie from Vegan Yack Attack and I were walking around the Expo when we spotted these on a corner table at the Hail Merry booth. The ladies there were all really sweet in indulging us by opening the bag, letting us try them, and them giving us each bag for later. They were so good! I'm already a sunflower seed fan- I love the crunch and getting a little extra protein in salty snack form- but these elevated the seed game for sure. They're just the right amount of spicy, without being too greasy or sticky to eat. Of course they leave a little spicy orange residue on your fingertips- just lick it off! These seeds are low-temperature dehydrated, then covered in spicy sriracha powder. They're not only vegan but gluten-free, non-GMO, and paleo-friendly, too! These aren't on the market yet- but they'll be here soon! Kept eye out for them here.

2. Organic Soda Syrups from Organic Fair
This is one product that I knew I was going to love as soon as I saw it and now I can't wait to order more! The booth was tucked away on the top floor of the event and had some of the friendliest guys behind the booth. Organic Fair makes simple syrups for soda out of organic, vegan ingredients like raw cane sugar, spring water, citrus, hibiscus flowers, molasses, herbs + spices. They're what soda should be, frankly. And they taste way better! I haven't had traditionally commercially made soda in years- its just bad for you, and we all know it. So this was a nice treat! I was able to buy a little sparkling filtered water down at Trader Joe's, pour about a tablespoon of syrup into a glass, and add the water. Ta da! Soda. I loved the earthy, lemony lavender flavor best, and Alex was really diggin' the ginger ale. We will definitely be buying more- its the perfect cure for a sweet craving and a great thirst-quencher on warm days!

3. Haunted Ghost Pepper Tortilla Chips from Paqui Tortillas
We stumbled upon the Paqui table on Day 2. The bright green cilantro tortillas (some of the best tortillas I've EVER HAD) caught Alex's eye so we wandered over and started grabbing chips. The guy at the table was super friendly and after we chatted about our mutual affection for super spicy foods, he pointed us toward the end of the table with a scary looking black bag labeled 'HOMEMADE HORROR'. Naturally, we were intrigued and had to know what was in the bag. Turn out, Paqui is the only company making tortilla chips dusted in a heavy orange GHOST PEPPER powder. Yup, ghost peppers- one of the spiciest peppers in the world and ranking at nearly a 1 MILLION on the Scoville Scale. And that sweet sweet goodness is spread all over these bad boys! Don't get me wrong- they're super fucking hot. But if you like really spicy food, this may be just the snack to for you! Also, would make a good (and also awful) prank food for someone. We like them best dipped in a bit of cold, fresh guacamole to mellow out the spiciness. You can order them here, but be aware that not all the other flavors are vegan-friendly.

4. Cheezy Mac in 3 flavors (Boxed) from Daiya Foods
ON MAN. This one's a game changer. After trying the Earth Balance Boxed Mac last year I was left disappointed. It lacked the flavor and texture of the boxed mac I grew up with, so when we saw samples of this new shelf-stable boxed mac with cheese sauce- I was hesitant. Luckily, I'm not one to let free samples go uneaten, so I grabbed a little cup of each flavor and tiny spoon and gobbled 'em up. I liked them all, but the alfredo was the cheesiest and yummiest. They're easy to whip-up and I can't wait 'till they hit shelves this summer. They're the perfect after-school snack or comfort food to munch!

5. The Neat Egg from Neat Foods
I was pretty excited to try this product after having tried their amazing neat meat- a meat alternative made from just a couple pronounceable ingredients like nuts + beans! No weird fillers here. And the neat egg? Literally just CHIA SEEDS and GARBANZO BEANS! Can it get any better than that?! We've used it as a binder now in cookies, waffles, and a loaf of banana bread with great results. We're big fans of this eggy alternative! Look for online and in stores soon.

When I was offered to receive one of Emily's von Euw's new cookbooks, Rawsome Vegan Baking, and review a recipe inside, I was thrilled. I've followed Emily's blog for a long time, admiring her increasingly amazing photography and her laid-back blog post writing. She regularly posts drool-worthy recipes that are not only raw, but vegan and gluten-free as well. She basically takes veganism to a whole new, raw dessert-filled level. And she seems like a gal I could have a good time with, and I like that.
When I received the cookbook in the mail, all wrapped up in its yellow manila folder, I tore it open and immediately had to pour through. Some of the pictures I recognized from teaser posts Emily herself had put up, but most were new to me: and GORGEOUS. And the best part? Emily's recipes are as simple as it comes; whole foods, like dates, nuts, and coconut oil make an appearance in nearly every recipe, but are all so differently arranged and combined. Plus, you can eat at least 6 of the cookies in the recipe that follows, because its all such good-for-you food. (Okay, 6 may have been overdoing it. Or not. No judgement here!)

I got to pick a recipe of Emily's to review, and had to go with her Raw Chocolate Cookies Sandwiching Vanilla Cream. In my own words, RAW OREOS! As a kid I loved these mega-crap-filled brand name sandwich cookies and ate rows and rows without every worrying about animals, my health, or my waistline...ah, to be 7 again. Now that I am concerned about those things, I vehemently avoid foods with so much processed sugar, wheat, and chemicals I can't even begin to pronounce; So when I saw Emily's recipe, I was beyond excited. A chocolatey, cream filled sandwich cookie that was totally guilt-free? SOLD! And the very best part? Emily's letting us give one of her cookbooks away to one of you! And before I give you the delicious recipe, a note from Emily herself:

"These are splendid. I love re-creating popular sweets because many people can identify with them and get excited about a healthy version of their favorite treats. I mean, really who doesn’t love Oreos? I just don’t love their long list of processed ingredients. So, here’s a simplified Oreo recipe, full of good-for you stuff, such as oats, cashews, dates and cacao. Relive childhood fun and dip a couple in a glass of vegan milk." Let's eat!

RAW CHOCOLATE COOKIES SANDWICHING VANILLA CASHEW CREAM
(aka RAW, HEALTHY OREOS)

COOKIES
¾ cup (68 g) oats
1 cup (175 g) pitted dates
2 tablespoons (15 g) cacao powder

VANILLA FILLING
½ cup (73 g) raw cashews
2 ½ tablespoons (50 g) pure maple syrup
2 tablespoons (30 ml) melted coconut oil
1 teaspoon vanilla extract

TO MAKE THE COOKIES: Pulse the oats in your food processor until they become a coarse flour. Add the dates and cacao and process until it forms a semi-sticky dough. If it’s too dry, add more dates. Roll the dough as thinly as possible onto parchment paper, then cut cookie shapes with a cookie cutter until you use up all the dough. Optional: Dehydrate for a few hours, or until they harden—this will make them crunch like the original.

TO MAKE THE FILLING: Blend all the ingredients until smooth; you may have to add some water to make it creamy. Put the filling in the fridge for 3 to 4 hours, until thickened.

ASSEMBLY: Spread the vanilla filling evenly onto half of your cookies, then press the remaining cookies on top of the frosted ones. Makes about 10.
