Her plant-powerful, family-friendly, whole food recipes are always thoughtfully presented and beautifully photographed, and her 20 years of knowledge as a vegan shines through in her creative recipes. Dreena is one of the pioneering vegan cookbook authors, and Plant-Powered Families is her 5th cookbook. She definitely knows how to throw together a great recipe, and this cookbook offers up 100 of her kid-tested & family approved favorites. The book is organized into both a cookbook and some helpful hints on getting picky eaters from toddlers to teens to eat and enjoy more plant-based meals. It’s no secret that our girls love guacamole. We go through many avocados a week. One night I decided to stretch the avocados and bump up the guac nutritional profile with the addition of white beans. Somewhat a cross between a guacamole and a hummus, this thick, creamy dip is a hit in our house. Dreena Burton's White Bean Guacamole Ingredients: 2 lightly packed cups roughly chopped/sliced ripe avocado 1 cup white beans 1/2 teaspoon sea salt 2–21/2 tablespoons lemon juice Water, to thin as desired Directions: Place the avocado, white beans, sea salt, lemon juice, and water in a food processor or blender and blend until smooth. Season to taste with additional salt and/or lemon juice. Notes:
